ingredients:
- 1 2.5-3 lb rotisserie chicken
- 2 cups store-bought red or green salsa
- 8 taco shells
- 1 cup grated cheddar or monterrey jack (4 oz)
- 8 springs fresh cilantro (optional)
- 1/2 cup sour cream
- 1 avocado, cut into 1 in pieces
- 1 lime, cut into wedges
using a fork or your fingers, shred the chicken, discarding the skin and bones. in a large skillet, combine the chicken and salsa and cook over medium heat until heated through, about 5 mins. fill the taco shells with the chicken mixture and top with cheese and cilantro. serve with sour cream, avocado, and lime wedges.
